I am back from an amazing eight days spent on the beautiful beaches of Spain with my dear friend Linzi. We whittled away the hours basking in the sun, stirring only to sample the delectable array of ice cream flavours or cool ourselves in the glistening blue sea. To say it was heavenly would be an understatement. Linzi, who has a holiday home over in the Cabo Roig region, was the perfect hostess and showed me the sights as well as making sure we sampled some pretty fine food in the evenings. The chocolate fudge cake featured was the most incredible chocolate fudge cake I have ever tasted.

The holiday went by in a whirlwind of hazy mornings, eclectic market stalls and unrelenting heat. We hired a car so I became very well acquainted with the right hand side of the road as we took a trip to the nearby shopping mecca to get our retail therapy fix! In every way, the break was just what we wanted and needed it to be and I could of cried when I was awoken by the dulcet tones of my alarm clock this morning. Take me back to the beach!
